Baked Red Beans and Rice

I recently picked up a new Vegetarian cookbook on Amazon.
This is a super-easy recipe from Quick Fix Vegetarian by Robin Robertson.
It's quite good. The flavor and spiciness will depend on the Salsa you use.

Baked Red Beans and Rice

2 Cups Long Grain Rice
2 1/2 Cups Vegetable Broth
4 Cups Salsa
2 Cans Dark Red Kidney Beans, drained and rinsed
1 tsp Chile Powder
1/2 tsp Salt

Preheat oven to 350 degrees.
Combine rice, broth salsa, kidney beans, chile powder and salt in lightly greased 3 Qt covered casserole.
Stir in .
Cover tightly and bake until the rice is tender, about 1 hour.

Super Simple Lenten Tamale Pie

I threw this together tonight and popped it in the oven while I sat down.
It was suprisingly good.
This made 8 servings in a 13 X 9 pan.

Super Simple Lenten Tamale Pie

2 15oz cans Vegetarian Chile
1 14oz can Diced Tomatoes with Green Chiles
1 15oz can Kidney Beans, drained
1 pkg Corn Bread Mix (enough for an 8 X 8 pan)
.......I used Trader Joe's Brand - it's yummy and sweet

Preheat oven to 350 degrees.
Pour the 4 cans into 13 X 9 stoneware baker (or glass or metal).
Mix together beans, tomatoes and chile in 13 X 9 pan.
In seperate bowl, make cornbread mix as directed on package.
Spread cornbread batter on top of chile mixture in pan.
Bake at 350 for 45 - 50 minutes.
Cornbread should be lightly browned.
Check with toothpick to make sure the cornbread is cooked through.

A Life Full to Overflowing

This, my life, is full to overflowing.
Quiet moments come occasionally, but are soon swallowed up in activity and noise.

I am thankful for the amazing man I am married to.
I am thankful for the bundle of kids that God has blessed us with.
I am thankful for this life that is full to overflowing.
I am striving to simplify my life.
I am striving to focus on those things that are really important.
I am striving to clear away things that clutter up my life and keep me from those things that are important.
I am quite distracible... this is a challenge for me.
Less is more... Less is more. I keep reminding myself.... Less is more.
